Instructions

Step 1: Blanch & Purée the Spinach

  1. Boil water in a pan, add chopped spinach and let it blanch for 2 minutes.

  2. Remove and immediately transfer to cold water to retain the green color.

  3. Blend the spinach with 1 green chili into a smooth purée. Set aside.


Step 2: Prepare the Curry Base

  1. Heat 1 tbsp oil or ghee in a pan.

  2. Add cumin seeds and let them splutter.

  3. Add chopped onions and sauté until golden brown.

  4. Stir in ginger-garlic paste and cook until the raw smell disappears.

  5. Add tomato purée and cook until the oil starts to separate.


Step 3: Cook the Masala

  1. Add turmeric, red chili powder, coriander powder, and salt. Mix well.

  2. Stir in the blended spinach purée and cook for 3-4 minutes on low heat.

  3. Add boiled sweet corn and mix well.


Step 4: Finish the Dish

  1. Pour in fresh cream or milk and mix gently.

  2. Simmer for 2 minutes, then add garam masala and mix well.

  3. Finish with butter (optional) and a squeeze of lemon juice.
