Instructions

Step 1: Cook the Dal

  1. Pressure cook the toor dal with 3 cups water, turmeric, and tomatoes for 3-4 whistles (or until soft).

  2. Once cooked, whisk the dal until smooth and set aside.


Step 2: Prepare the Dhokli Dough

  1. In a mixing bowl, combine wheat flour, gram flour, turmeric, red chili powder, ajwain, salt, and oil.

  2. Add water gradually and knead into a firm yet smooth dough. Cover and let it rest for 10-15 minutes.


Step 3: Roll & Cut the Dhoklis

  1. Divide the dough into equal portions and roll it into a thin chapati (about 2mm thick).

  2. Cut into small diamond or square shapes using a knife or pizza cutter.

  3. Keep them aside on a plate.


Step 4: Prepare the Dal Base

  1. Heat ghee or oil in a deep pan, add mustard seeds, cumin seeds, dried red chili, curry leaves, and asafoetida. Let them splutter.

  2. Add the cooked dal, red chili powder, coriander powder, garam masala, salt, jaggery, and tamarind pulp. Mix well.

  3. Add 2 cups of water (adjust based on desired consistency) and let it come to a boil.

  1. Once the dal is boiling, gently drop the dhoklis one by one, stirring continuously to prevent sticking.
