Ingredients (Serves 3-4)

For the Dough (Outer Covering):

  • 1 cup whole wheat flour (atta)

  • ¼ tsp salt

  • ½ tsp carom seeds (ajwain) (aids digestion & adds flavor)

  • Water, as needed (to knead the dough)

For the Aloo (Potato) Stuffing:

  • 2 medium potatoes, boiled & mashed

  • ½ tsp salt (adjust to taste)

  • ½ tsp turmeric powder (haldi)

  • ½ tsp red chili powder (adjust to spice preference)

  • ½ tsp coriander powder (dhania powder)

  • ½ tsp cumin powder (jeera powder)

  • ½ tsp garam masala (optional, adds extra flavor)

  • 1 tbsp chopped coriander leaves (for freshness)

  • ½ tsp dry mango powder (amchur) (optional, for tanginess)

  • 1 green chili, finely chopped (optional, for spice)

For Tempering (Tadka) – Optional, for Extra Flavor

  • 1 tbsp oil or ghee

  • ½ tsp mustard seeds (rai)

  • ½ tsp cumin seeds (jeera)

  • 1 pinch asafoetida (hing) (aids digestion)

  • Curry leaves (optional, for South Indian twist)


Instructions

Step 1: Prepare the Dough

  1. In a bowl, mix whole wheat flour, salt, and carom seeds.

  2. Gradually add water and knead into a firm yet pliable dough (like roti dough). Cover and let it rest for 15 minutes.


Step 2: Prepare the Potato Stuffing

  1. In a bowl, mash the boiled potatoes.

  2. Add turmeric, red chili powder, coriander powder, cumin powder, garam masala, salt, amchur, chopped coriander, and green chili. Mix well.

  3. Ensure the stuffing is dry and not watery. Set aside.


Step 3: Shape the Fara

  1. Divide the dough into small equal portions and roll them into small discs (like puris, around 3-4 inches in diameter).

  2. Place 1-2 tsp of potato stuffing in the center.

  3. Fold the disc into a half-moon shape and seal the edges by pressing firmly. You can also shape them into cylinders or dumplings.


Step 4: Steam the Fara

  1. Heat water in a steamer or idli cooker.

  2. Grease the steaming tray and place the prepared fara on it.

  3. Cover and steam for 12-15 minutes on medium heat until they turn firm and cooked through.

  4. Remove and let them cool slightly.


Step 5: Tempering (Optional – Enhances Flavor)

  1. Heat 1 tbsp oil or ghee in a pan.

  2. Add mustard seeds, cumin seeds, and hing. Let them splutter.

  3. Add curry leaves (optional) and sauté for a few seconds.

  4. Add the steamed aloo fara and sauté for 2-3 minutes, turning them gently until lightly crispy.
